Crockpot BBQ Pulled Pork

Ingredients:

3-4 lbs pork shoulder (also known as pork butt), trimmed of excess fat
1 large onion, sliced
1 cup BBQ sauce (your favorite kind)
1/2 cup chicken broth
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon mustard powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Buns (for serving)
Coleslaw (optional, for serving)

Instructions:

Prepare the Pork: Place the sliced onion in the bottom of the crockpot. In a small bowl, mix the smoked paprika, garlic powder, onion powder, mustard powder, salt, and black pepper. Rub the spice mixture all over the pork shoulder.

Add Ingredients: Place the seasoned pork shoulder on top of the onions in the crockpot. Pour the BBQ sauce, chicken broth, apple cider vinegar, and brown sugar over the pork.

Cook: Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the pork is tender and easily shreddable.

Shred the Pork: Remove the pork from the crockpot and shred it with two forks. Return the shredded pork to the crockpot and stir to combine with the sauce.

Serve: Serve the BBQ pulled pork on buns with coleslaw, if desired.
