Ingredients:

4 large bell peppers (any color), tops cut off and seeds removed
1 pound ground beef or turkey
1 cup cooked rice (brown or white)
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and freshly ground black pepper to taste
1 cup shredded mozzarella or cheddar cheese
Fresh parsley, chopped (for garnish)

Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C).


Prepare the Bell Peppers

Cut the tops off the bell peppers and remove the seeds and membranes.
Place the bell peppers in a baking dish, cut side up. If needed, trim the bottoms slightly so they stand upright.


Cook the Filling

In a large skillet over medium heat, cook the ground meat until browned and fully cooked. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet and sauté until softened, about 3-4 minutes.
Stir in the diced tomatoes, cooked rice, dried oregano, dried basil, salt, and freshly ground black pepper. Cook for an additional 2-3 minutes until the mixture is well combined and heated through.


Stuff the Bell Peppers

Spoon the meat and rice mixture into the prepared bell peppers, filling them generously.
Top each stuffed pepper with shredded cheese.


Bake the Bell Peppers

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.


Serve

Remove the stuffed bell peppers from the oven and let them cool slightly.
Garnish with chopped fresh parsley before serving.
